Cheesy Beer Nachos Recipe

Ingredients

  • 1 tablespoon Canola Oil
  • 1 small green Jalapeño, thinly sliced
  • 2 tablespoons Unsalted Butter
  • 3 tablespoons All-Purpose Flour
  • 1 cup Beer, Ale or Dark Beer
  • 1 teaspoon Dry Mustard
  • Dash Tabasco Sauce
  • 3 ounces plain Cream Cheese, softened
  • 1/2 cup Milk
  • 6 ounces White Cheddar Cheese, grated
  • Salt and freshly ground Black Pepper, to taste
  • Nacho Chips
  • 1 or more Jalapeños, thinly sliced, for garnish

Directions

  1. Heat the canola oil in a medium sauce pot over medium heat.
  2. Add 1 small sliced jalapeño and garlic. Sauté until tender, stirring occasionally, about 4 minutes. Make sure the garlic doesn’t burn.
  3. Stir in butter and melt.
  4. Add the flour and stir to incorporate into the oil and butter. Cook 2 minutes, stirring.
  5. Whisk in the beer and bring to a boil.
  6. Add the mustard and Tabasco sauce and stir.
  7. Add the cream cheese and milk and stir until the cream cheese has melted.
  8. Stir in the cheddar cheese until it has melted and forms a smooth sauce.
  9. Season with salt and pepper to taste.
  10. Serve with nachos and fresh jalapeños.
