BBQ Baby Bakers are simply BBQ Rubbed Baked Baby Potatoes. But there is nothing simple about the taste – These babies will knock you out.
BBQ Baby Bakers (BBQ Rubbed Baked Baby Potatoes)
Before we start, you gotta know two things.
First – I created this recipe after seeing a picture and one sentence description on Yelp from the entry for OinkADoodleMoo Restaurant in Richmond, IN (Sadly, now closed).
So you know it is simple and easy.
Second – DO NOT be put off by the simplicity of preparation and lack of ingredients (there are exactly 2! if you don’t count the frying oil.) Two is all you need for perfection.
These go equally well with a steak or a hamburger. Or make some for your next party. The only thing I would recommend is that you serve them at least warm. The oil gets a bit thick if they get too cold.
As we say around here — These are keepers!
BBQ Baby Bakers Recipe (BBQ Rubbed Baked Baby Potatoes) Recipe
Materials
- 1 bag about 1 pound tiny baby Potatoes
- 1/4 to 1/2 cup Dry BBQ Rub - Store Bought or Homemade See below
- 1 - 2 tablespoons Oil for cooking
Instructions
- Wash and dry the potatoes.
- Cut the larger potatoes in 1/2 or even 1/4. You may want to cut all but the very smallest as they taste better if you let a bit of the potato flesh be exposed to the frying. But they do look cool if at least some of them are whole. Your call.
- Heat the oil in a heavy fry pan over medium heat.
- Add the potatoes and fry until they are done and starting to get a bit crispy around the cut edges.
- Remove the potatoes to a large bowl.
- Add the BBQ rub and toss to coat completely.
- Place on a plate and enjoy.
